  • 1 pound cake or pastry flour 4.5 cups
  • 1 tablespoon baking soda
  • 1/2 Teaspoon salt
  • 14 ounces buttermilk

  • Make sure your oven is pre-heated to 375 degrees Fahrenheit prior to adding the buttermilk
  • Weigh one pound of flour and add it to a fine mesh sifter over a large bowl. Add baking soda and salt. Sift to combine.
  • Add in buttermilk and with a wooden spoon gently pull the flour mix from the sides of the bowl and combine the dry with the wet. Dough will be very wet and very soft.
  • On a well-floured surface, turn out the dough and gently knead 6-8 times being careful not to disturb the gas.
  • Form into a flat round disc.
  • In a lightly oiled and floured baking dish, place your dough into the center and cut a cross on the top of the dough.
  • Bake 35-45 minutes or until a skewer inserted in the middle of the dough comes out clean.
