Black Bean Quesadilla – Meatless Monday

Well Hello Monday! How are you? That’s good! You know that many people do not like you much and for that I want to apologize. I’m not sure exactly who started meatless Monday, but I am glad that they did! For this, I thank them. It has inspired dishes such as this black bean quesadilla. This is my nod to the month I fed my family complete vegetarian meals and no one was the wiser.

I could of definitely kept this rouse going if it wasn’t for my own neglect. The shopping bag from my favorite mega mart with the Vegan cheese peeking out the top. My son and his keen observation skills (he got those from me by the way – cursed) asked “What the heck is that?!?!”. Busted. Cover blown. Sad face.

I have modified this version to include sharp cheddar cheese but, you could most definitely go all the way and “vegan-ize”. I love that word, “vegan-ize”. Okay, moving forward……

I can not tell you enough how much flavor the black bean has. I am a textural type of eater. I have had a long standing aversion to whole beans and would only consume those of the re-fried variety. I ventured out of my comfort zone and made these black bean quesadilla’s and I was pleasantly surprised. With the spices that you add to these……oh my goodness. I wholeheartedly believe they intensify the flavor of the beans.

Pair this with a perfect salsa and a touch of sour cream you can’t go wrong. I could go on and on about these perfect little pockets of deliciousness but, it is Monday after all. It is hectic, the beginning of the week and for my part of the world, HOT!
