    Sometimes.... you do what ya gotta do. I’ve been Sometimes.... you do what ya gotta do. I’ve been hard pressed to find stone ground cornmeal and have been craving garlic and parmesan creamy polenta. So, we found the tubes and went to work! So easy you guys. One 18 oz roll of polenta diced and added to 1 cup of chicken stock until heated through. If you have an immersion blender, get it out and start blending! Viola! Creamy polenta. Add in kosher salt, pepper, garlic and Parmesan. Alternatively you can use a potato masher or a fork; it may just take a little longer. I made quick skillet chicken breast in a little bit of butter and coconut oil along with roasted veggies. Onion, tomato and sweet potato (which I had partially blanched and froze ) and there you have it. One thing this awful situation has done is forced us to be a little more creative with how we live. It’s usually a big family affair and well this year - not so much. However, I cooked like there were going to be 50 people for dinner and I have an abundance of leftover ham. I love potato cheese soup so why not add in that ham and some broccoli along with sautéed onions and garlic, ground mustard, cayenne pepper, salt and paprika? Topped off with some green onion and voila - about a 1/4 of the ham is gone lol What are you guys doing with leftovers? Let me know, I’m open to any and all ideas!     Easy peasy coconut rice! So fragrant and absolutel Easy peasy coconut rice! So fragrant and absolutely delicious! I'm having a totally addicted moment and had to share 😊. Recipe below 👇 2 tablespoons coconut oil 1/4 teaspoon coriander seed (whole) 1/2 teaspoon cumin seed (whole) 1/2 cinnamon stick 2 cups basmati rice - rinsed clear 5 oz. sweetened condensed coconut milk 3 3/4 cups filtered water 1/2 cup fresh cilantro (approximate) 1. Preheat pan and add oil. Once oil is heated add in spices and let cook until fragrant. About 1 minute 2. Add rice to pan and toast until nutty. About 10 minutes. 3. In a 4 cup measuring cup, add coconut milk then add filtered water to the 4 cup mark. Whisk to combine the condensed coconut milk with the water. Add liquid to pan and stir. 4. Bring rice to a boil then turn down heat to simmer. Cover and let cool 20 minutes undisturbed. 5. After 20 minutes remove from heat and stir in fresh cilantro. Serve and enjoy! A little sweet and a whole lotta flavor y'all. We love to serve this with Tika Masala ... it's fabulous 😊 Let me know in the comments what you think!
