Easy Asparagus Radish Tarts | How to make them

Easy asparagus radish tarts combine ginger, lemon, and chive cream cheese surrounded by puff pastry and topped with sliced radish and asparagus. Making these little pillows so very tasty.  Perfect for a party or to have at brunch. So easy and quick with freezer ready puff pastry.

 

I love party planning and love having people over to eat. I love sharing food with family, friends, neighbors, the guys at my favorite gas station…….no, seriously; it’s a thing.  These cute little pillows fill all my loves.

The fact that my children have named them “healthy pop tarts” makes me smile even more.  I laughed so hard watching them decide if they enjoyed my asparagus radish tarts and then aptly naming them.  Followed by eating three more for the boy and one for the girl.  Gotta love the kids.  They are your most honest critics.

These asparagus radish tarts are so easy to make you can crank out quite a few of them in no time as a dish to bring to a potluck or if you’re expecting guests.  A few simple ingredients, about 15 minutes of preparation and you are off to the races.

I used ginger paste for this recipe out of pure convenience and the fact that it is smooth.  Don’t be afraid to use fresh ginger and puree in a spice grinder or with a mortar and pestle. Doing this you should be able to reach the same consistency.

Portioned puff pastry to make tarts

Start by rolling out one puff pastry sheet to get it even.  Puff pastry is sometimes a little offset when they thaw and I like to give them a bit of fine-tuning.  Once the pastry is in a basic rectangle shape, with a pizza wheel, pastry wheel or a knife, divide your pastry into equal squares. I was able to get 6 out of one pastry sheet, however, you can make them smaller if you wish.

 

Puff pastry that has been docked

With a fork, “dock”, or make small holes in your pastry at random locations.  You’ll want to do this so that the entire square does not completely puff and turn into a pillow instead of a tart.

Combine the egg, ginger, scallions, and cream cheese into a bowl and mix until well combined. Once combined, spread a small amount on each pastry leaving the edge clear.

Top with cut asparagus and sliced radish.  Pinch the corners together and you are ready to bake!

These easy asparagus radish tarts go great with our American Cobb Salad. Pair these with a glass of prosecco or our refreshing Grapefruit Tequila Spritzer and you are in for a perfect lunch.

Ingredients

  • 1 box frozen puff pastry thawed per box instructions
  • 1 bunch Asparagus
  • 2-4 whole Radishes thinly sliced
  • 8 ounces cream cheese room temperature
  • 1 whole Large egg
  • 1 teaspoon chives diced
  • 1/2 teaspoon ginger paste

Instructions

  • Before starting, make sure the puff pastry is thawed (follow package instructions) and cream cheese is at room temperature.
  • Preheat oven to 350 degrees.
  • Roll each puff pastry sheet into a rectangular portion. You will not have to roll your pastry too much, you are looking for an even rectangular shape.
  • With a sharp knife or pizza wheel, divide each sheet into six equal portions.
  • Combine cream cheese, ginger paste, chives and egg into a bowl and stir until evenly combined. Using a fork, dock each piece of pastry in several random locations.
  • Spread cream cheese mixture evenly on to each pastry square leaving the edges clean.
  • Top each pastry piece with fresh asparagus pieces and thinly sliced radish.
  • Pinch the corners of each puff pastry piece and place on a baking sheet.
  • Place in the oven and bake for 8 to 12 minutes or until light golden brown.
  • Once baked, remove from baking sheet and place on a wire rack to cool. These pastries are best served warm.
